Citral (geranial and neral), citronellal, geraniol, β-pinene, α-pinene, β–caryophyllene, comprising 96% of the essential oil ingredients. Other major components are citral representing, linalool, citronella, borneol, neral, phenolic, l-ascorbic acid citral (geranial and neral), cubebene, terpinolene, γ-3-carene, terpinene, bertacaryophylene and muurolol.

Because of special properties of lemon balm as an aromatic herb, it is widely used in pharmaceutical, food, cosmetics, pesticide and beverage industries. It is frequently featured in many cosmetics for its soothing effect on the skin. It is surprisingly versatile culinary herb which can be used to flavor many different types of dishes, from beverages, to appetizers, main courses and desserts.

Melissa officinalis belongs to a genus which includes five species of herbs native to Europe, Central Asia and Iran and is grown in the most parts of Iran. Lemon balm is cultivated in many parts of Iran and uses widely in various industries in this country.
